The big birthday party, being only days away… and a big task of making a two-tier birthday cake on my hands.. as I failed to order one in time.

Two-Tier Cake Idea
The idea was to make a two-tier cake, so I needed to bake 2 cakes of different sizes. Yes, it only works when the two said cakes have different sizes! Note: “Next time, have your helper bake one cake about 26cm/ 10″ in diameter and the other cake about 16cm/ 6”. This way, you end up with nice steps on your cake. Unfortunately, I was presented with two cakes of almost identical size. I didn’t want to cut one smaller and waste a bunch of cake, so I ended up with a two-tier cake disassembled into two separate cakes.. oh well.

Gold and Chocolate Sponge Cake
I am not a fan of chocolate cakes because they are very often too sweet and heavy. Well, I made mine quite refreshing. So my first birthday cake ended up being a Chocolate sponge cake half. I like to drizzle the inside with Czech rum “Tuzemak”, which has absolutely the best fragrance for the cakes! For the fresh flavor, I spread the layers with raspberry jam. Then I spread a bit of the Creamcheese butter frosting inside and rest on the outside of the cake. Finally, I topped the cake with milk chocolate ganache and decorated it with golden edible lace.
Ruby Vanilla Sponge Cake
The second cake of the two tiers was a Vanilla sponge cake. I have also used a raspberry jam to freshen up the inside but then I filled it with Chocolate buttercream to complement the flavor. I covered the whole cake in a very thin layer of white fondant. Another thing I hate is thick over-sweetened sugar coating. K2 proved to be a great and very tasty choice. I am mad about chocolate. I love delicious chocolate! So I bought a top-quality exquisite Ruby chocolate (don’t confuse it with artificially colored chocolate!). I decorated the cake with vanilla buttercream, pre-made wafer paper flowers, and dried raspberries.
They came out so delicious!! Each in its own way. Not too sweet, not too heavy, and very refreshing 🙂
